Ethan Pikas (head chef co-owner). Ethan has been working in restaurants for a very long time, but this is his first and only one. He loves cooking healthy food and is deeply midwestern which guides all of the food that comes out of the kitchen.
Tony Bezsylko (sous chef co-owner). Tony moved to Chicago from California with a bread shaped hole in his heart which was filled by Bread, the community night centered around the sharing of home baked loaves. Over time this grew into a restaurant and an even deeper felt love of gathering around food.
Emily Sher (general manager co-owner). One of Emily’s favorite books is Nourishing Traditions so she is glad that she works at Cellar Door Provisions.
Gabe Moya (chef de cuisine). While Gabe has worked in many restaurants he has been at Cellar Door since January 2016. He also runs a hot sauce business called Aji Sobremesa and supplies us with hot sauce to put on our eggs every morning.
Erin Koroll (pastry cook). Erin loves to cook with high intentions; nutrient density, spiritual vibration, and kindness in mind. She’s a Colorado mountain girl at heart, and is falling in love with Chicago.
Chuck Cruz (lead line cook). Originally from New Jersey, Chuck wandered around Thailand before coming to work at the restaurant. He holds down the daytime line and is an aspiring (but already excellent) hype man.
Hailee Catalano (line cook/tournant). Hailee is Midwestern heart cooking to her core. She holds down the line while singing sweetly. Her favorite soup is egg noodle dumpling.
